Professor Peter McClure is a Microbiologist and former Microbiology Department Manager for Europe, at Mondelēz International R&D Ltd.

He is a Food Safety Expert with extensive knowledge and expertise in microbiological food safety and spoilage. He has wealth of experience in food product and process design for a wide range of foods including chilled, ambient and frozen products and wide experience of interface between industry and Governmental/Non-Governmental Organisations and between research and business application.

Prof McClure was previously at Unilever where he was responsible for the science strategy for microbiological safety, directing external research and was the primary contact for key external groups, including Regulatory Agencies, Research Institutes, non-governmental agencies, the World Health Organisation and Food and Agriculture Organisation. He is regularly invited to be a member of committees for directing research and setting future programmes, and reviewing current research programmes.

Prof McClure has published in excess of 60 papers in a wide range of peer reviewed journals as well as many book chapters, contributions to proceedings and other popular reports.
